I get a little nervous when I talk about pairing wine with pimento cheese. I think it’s a little presumptuous of me. Honestly, I don’t know a lot about wine. But I like to cook, and I like to research, and my husband is a willing guinea pig.
My favorite combination is a nice Pinot Grigio and Birdie’s Cream Cheese and Black Pepper. A cool, crisp glass of wine with a little PC on a cracker, add a couple of friends and you have a lovely afternoon. Especially this time of year. Autumn in Southern Virginia can run so fast, with fall festivals, football and homecoming dances. It’s nice to slow down a bit and savor a delicious moment.
If you get over to our neighborhood sometime, Rosemont of Virginia is a beautiful winery just up the road from us. Be sure to stop in to see them. Tell them Birdie says, “Hi.”
